Spring Boutique, Paris

While plenty of American chefs come to hone their craft in Paris, those who stay and strike success on their own are an exceedingly rare breed. That concept was turned on its head by Chicago-born Daniel Rose and the opening of his tiny restaurant, Spring, in 2006. Crowds of discerning Parisians immediately flocked to the place.

When Rose opened his twenty-seater in an off-the-beaten-track neighborhood that offered a market-driven, set menu that changed each day, it was as admirable as it was daring. It quickly became known as the place Michelin inspectors went on their day off. With reservations backed up for up to five months, Rose decided to relocate Spring to a larger space on Rue Bailleul.

However, construction delays meant the opening date was pushed back to, appropriately, Spring of 2010. Frustrated, Rose started a rotisserie style restaurant, Table 28, in the old Spring space.

Meanwhile, Rose recently opened a small food and wine shop in Les Halles called Spring Boutique. While still very much a work in progress (on a recent visit, I chatted with Rose while he moved a new refrigerator into place), the boutique showcases some of Rose and manager Josh Adler’s favorite products from France and the Mediterranean, including a selection of sausages and cured hams, organic coffee, Spanish olive oil from Manzanilla, lemon oil from Sicily, and more.

Their wall of wines includes choices like a 2008 Mondeuse from Bugey, which will be featured at an in-store tasting held by the winemaker, Franck Peillot, on December 10th.

So while you’re waiting for that reservation line at Spring to open, stop by the boutique and see what Rose and Adler eat on their day off.
